Kimberley Time is a barrel rested gin and the third release in our new gin series. This spirit is our tribute to the way of life those of us up near the top end of the island have come to know and love. Up this way, life’s a bit more steady, a bit more “laid back”. Folks operate at their own pace. Their own sense of time. You know, what we call Kimberley Time.

So with that in mind, we took our Out Of The Ord Tropical Gin and let it take a little kip of its own in some emptied Ord River Rum barrels. While barrel rested gins have been popping up more often these days, no one in Western Australia’s ever used rum barrels to make one before. So we thought we’d be the first to correct that oversight and have a crack at it ourselves.

Barrel rested gins are always a bit of a category bender. Half like one thing, half like another thing. Resting them in rum barrels instead of whiskey or wine barrels just turns everything you thought you knew about aged gin on its head. Think tropical fruits and botanicals, then casually barrel rested to chill out, mellow up, and soak in those beautiful aromas. A little bit troppo, a whole lot enjoyable, and something we recommend you take your Kimberley Time with.
